Our youngest, Zuri or Zu, was born with severe allergies to dairy, eggs, tree nuts, peanuts, seafood and shellfish... phew... (What can she eat right?) I honestly had no clue that there was milk in EVERYTHING. As a nursing mom with an intense sweet tooth we needed a solution. In the beginning phases I just didn't eat desserts. While my waistline was seriously thanking me, once Zuri was a little over a year old she was not having it. She wanted to eat cookies and cakes just like her big sister, Zion. So mama to the rescue!
I made recipe modification after recipe modification, and had fail after fail for about 3 whole months. My mom, as a pastry chef, had tons of recipes that we used in our family bakery so I had a solid foundation to start. I worked out the egg free portion of the cookies and one fated day walking through the grocery store I found the solution to my dairy in chocolate issue. Soon afterwards I found additional brands that sold allergen friendly chips and chunks. Using this base cookie recipe i was able to make up different variations including S'Mores, Birthday Cake, Red Velvet Chip, Double Chocolate, and her current favorite- Cereal Surprise.
Since I am no longer nursing, I have branched to include more cookies that are not dairy free and egg free. I started this entire journey all to make my little girl happy :) I know she is not alone and hope to help other moms and kiddos!
Our girls, Zi & Zu are involved in all phases of cookie production and love when mommy makes a "not so pretty cookie" because they get to eat those. I secretly think that they intentionally make cookie 'mistakes' so that they can eat extras but i won't complain as long as they eat their veggies.
